On a mission and they still feed the multitudes!!

This is a breakfast quiche/casserole. I made it with lots and lots of zuchinni, yellow squash, onions, red potatoes and tomatoes. I picked all this fabulous produce at the Jones plantation last weekend. Sam planted it all last spring. And now, as they serve a mission in Kosovo, we still reap the benefits of his amazing gadren!! Dalynn and Devarie have been trying to keep the massive garden under control...but there is a LOT of garden!!
It made me so happy that even with the parents half way around the world, we were still able to take home a haul of their produce...just like every year. I LIKE things the same every year. I miss Sam and Marlyn, like everyone else does. But their produce makes me smile! I walked around the plantation checking out the massive pumpkins coming on, snacking on raspberries, picking corn, and loving it all!! Ellie eats the corn on the cob better than any other veggie on the planet!! Sing praises!! We've eaten a ton and have more to eat, and I froze six bags of the pure gold! I also froze big bags of zuccini and yellow squash for future soups and meals, and we'll eat red potatoes for a few weeks!!
